BANANA AND COFFEE PANCAKES / Vegan / Gluten Free

Preparacion

1. Oil a frying pan and place it over medium heat. (I use a special one for pancakes that I got a long time ago at Carrefour)
2. Blend all the ingredients to form a liquid mixture.
3. Pour a little of the mixture over the pan and cook until the surface is opaque. Turn. Repeat process with the whole mixture.
4. Serve and add toppings to taste!

Ingredientes

(1 serving, 6 mini pancakes)
1/4 cup of water
2 tablespoons almond milk
3 tablespoons buckwheat flour
1/2 banana, preferably ripe
1 tablespoon ground flax
1 teaspoon of instant coffee
1/4 teaspoon baking powder
pinch of salt
Stevia to taste
vanilla extract to taste
